If you are like me and you love burrito bowl recipes, then you are going to love this! To me there’s nothing like a burrito bowl with all of your favorite ingredients mixed together.

This burrito bowl recipe is super easy to make only cooking for 25 minutes total. (Yep, you heard that right!)

You will need an instant pot. If you don’t already have one I totally recommend one. It saves me and my husband so much time with cooking, it is unbelievable. You can grab one Here if you don’t already have one!

Ingredients

You will need the following:

2 Thawed Chicken Breasts

4 C. Chicken Broth

2 C. Brown Rice

1 Chopped Onion

1 Tsp. Onion Powder

1 Tsp. Garlic Powder

1 Tsp. Lemon Pepper

1 Tsp. Oregano

1/4 Tsp. Paprika

1 Tsp. Chili Powder

1/4 Tsp. Cayenne Pepper

1/2 Tbsp Natural Mesquite Liquid Smoke

1/2 Tbsp. Freeze Dried Garlic

Directions:

First you will need to pour 4 Cups of chicken broth into your instant pot.

Next, place your chicken breasts in with the broth. Chop up your onion and measure out the 2 Cups of brown rice to throw in your instant pot. Pour in your mesquite liquid smoke with everything. Now for the spices.

Measure Spices:

Measure all of your spices into a bowl and mix until well blended together. Mix your spices into the rice before closing the lid and cooking.

Cook on manual high for 22 minutes.

While the chicken and rice are cooking you can chop up some lettuce at this time if you would like some lettuce with your burrito bowl. If not it is totally fine, I didn’t do lettuce with it this time around but it is great with or without it.

When the timer goes off at the 22 minute mark, let it sit for 3 extra minutes before releasing the pressure.

Once the 3 minutes is done, release the pressure. (Wait until all pressure is released before opening the lid).

Now that the pressure is all released you will need to pull out the chicken breasts and shred them before putting them back in with the rice.

Let cool for a few minutes. Add in sour cream and some lettuce if you would like. Serve and enjoy!

Tip: Eat it with chips or no chips. It is great either way!
