With a few simple ingredients, you can have a fantastic meal that will leave you feeling satisfied and happy.

Healthy Chicken Tacos

Ingredients you will need:

Tip: This ingredients list will feed two people, if you are needing to feed more than two in your family I would double this recipe to your liking. 🙂

  • 2 Chicken Breasts
  • 1 13.4 oz can Black Bean
  • Half a head of Shredded Red Cabbage
  • 1 lime
  • Tortillas
  • 1 Red Onion (Optional) In this recipe I did not use an onion
  • 4 Green Onions
  • 1/2 c. Mayonnaise
  • 1/4 oz Cilantro

Black Bean spice ingredients:

  • 1/4 C. Water
  • 1Tbsp Chili Powder
  • 1Tsp Garlic Salt
  • 1 Tsp Paprika
  • 1 Tsp Onion Powder

Healthy Chicken Taco Recipe

To start this healthy chicken taco recipe, I would start by heating up your pan that you are going to cook the chicken in. While your pan is heating up cut the chicken into cubes and place salt, pepper or your favorite chicken seasoning mix onto it. Next, place your chicken into the pan and cook until all chicken cubes are cooked through.

While your chicken is cooking, start by chopping up your veggies. In separate bowls place your chopped tomatoes and green onions.

Separate the bottom green onions for saute’ing with our black beans. And place in another bowl the darker greens of the green onion.

In a separate bowl you will be placing your chopped red cabbage. In the bowl with the red cabbage you will place your 1/2 C of Mayonnaise, half the cilantro if you haven’t already and a squeeze of lime juice to taste. Don’t forget to check on the chicken.

Stir the mayonnaise into the cabbage until the cabbage is covered and everything is mixed. Check and make sure that the chicken is cooking.

In a separate pan, place the bottoms of the green onion and saute them for 1-2 minutes. Once they are soft place your can of black beans into the pan and warm up.

Once your black beans are warmed up, place 1/4 c. of water, along with your spices into the pan and mix everything together. Once you have your ingredients stirred together, grab a flat spoon or a potato masher and mash the black beans until they are completely squished.

You want them to be almost like a nice paste.

Once, your chicken is cooked through and the black beans are smashed. You will now need to place your black beans on the bottom of your tortillas along with the chicken, cabbage mixture, tomatoes and the rest of the cilantro and darker green onions.
