I love salads of all types. You can create it however you would like, with all the veggies in the world mixed together. I don’t know about you but eating a healthy chicken salad recipe makes me feel good inside. Plus who doesn’t love a good ‘ole fashioned chicken salad recipe?

With making this recipe, I honestly was a little surprised how well my chicken turned out. The chicken was super flavorful, moist and juicy. Adding a lot of flavor to this salad recipe. I tend to over cook my chicken just a little bit too much to where the texture seems like chewing gum. But with this recipe it was cooked perfect. Another reason I love my instant pot. 🙂

Chicken Salad Recipe

First you will need to cook your chicken. I used my instant pot to cook the chicken.

If you have an instant pot you will need to add 1 cup of water in with the 2 lbs. chicken breasts that you have.

Season the chicken with you favorite seasonings.

Set your instant pot to manual high and cook for 10 minutes.

If your chicken is frozen then cook for 12 minutes.

Next Steps:

While the chicken breasts are cooking, you will need to cut up your lettuce, rinse and put into a bowl.

Now is a great time to chop up other veggies you would like added in with your salad. I usually love tomatoes on my salad but didn’t have any at this time to chop up. 🙁 I know.

Add in some black olives to your salad, if you like. Black olives are probably my most favorite part of a salad, other than the croutons.

Rinse and chop your black olives into thin slices and set aside in a bowl for now.

Feel free to add in whatever you would love here. It could be diced carrots, green olives, tomatoes, spinach and so forth. The great thing about a salad is you can add any vegetables that you love.

Once the instant pot timer goes off you will need to release the pressure. After all the pressure is released out of the instant pot you will need to pull the chicken out, place onto a cutting board and slice into long thin slices or little square pieces. However you prefer.

Once sliced the way that you like, place on top of your salad.
